We HAD to share these zucchini oatmeal cups because the recipe is so stinking versatile it’s about as perfect as portable breakfasts can get. You can switch the almond butter for peanut butter, add some diced apple for an autumnal feel or even throw in some chocolate chips so the kids will eat them (whoop you just snuck veggies into breakfast – go super mom!)
